Methods
The wine has a firm nose, light vegetal and herbaceous notes, with nutty, yeasty and earthy notes. The fruit becomes slightly underripe, fairly tranquil, and slightly creamy on the palate. The wine has a very elegant acidity, good depth and intense, chalky mineral notes, but it is still a baby. It needs 30 or so minutes to wake up, but once it gets going, it sings.

Vineyard Notes

The Wisselbrunnen is located at a height of 100 meters above sea level and is exposed to the south-southwest, which ensures optimal solar radiation. The light tertiary marl soil has good water retention capacity, which means that the grapes reach a high degree of ripeness even in very dry years.

Production Notes

The grapes are picked by passing through the vineyard several times mid September to early October, harvested by hand and carefully transported to the winery in small boxes. This is followed by a cold soak maceration period of up to 12 hours before the wine is fermented using spontaneous native yeast. Fermentation is allowed to continue all the way to full dryness. The wine is aged mainly in used barriques and 600L barrels for a period of 18 months. The rest of the aging takes place in bottle in the cellars of the winery. The different lots are blended by the cellar master over a period of several weeks. Dry vinified selections develop an intense flavor and higher alcohol content.

Fun Facts

There are different theories about the origin of the name Wisselbrunnen. On the one hand, the relationship with weasel or meadow is spoken of, on the other hand, the name is based on the Latin word ""fistula"", which means ""the tube"", and gives reference to the well located there.
