Vineyard Notes

Soil Type(s): Terra Rosa - Red Clay on limestone

The grapes were grown in the Gullyview Vineyard in Watervale. The grapes were hand harvested and sorted on site on March 18th and 20th, 2023.

Production Notes

The grapes are cold soaked for 1-5 days and then crushed and de-stemmed with another 1-5 days on the skins for the Grenache and 7 days for the Vermentino. The free run and later pressings are combined, then cold settled on dirt for 24 hours. The Grenache was fermented in 2000L Slavonian oak Foudre for 3 weeks, utilizing native yeasts. The Vermentino was fermented in stainless steel using native yeasts for 2-3 weeks. It is then aged in stainless steel tanks for 4 months on fine lees with sterile filtration but no fining.

This year Damon decided to go in a different direction. Why give you one of something when three will do! This is the third use for his favorite white grape, Vermentino. Playing to the dark side of the force, but still going against the more brooding and fleshy styles we see from hotter climates, its the Mr. Hyde to the Dr. Jekyll of the pink bottlings. Definitely best served with a chill!
