This is one of the most bracing red wines we have ever come across, the acid here is just through the roof. The ripeness of the aromas on the nose are deceiving, this is an acid monster. Bright sour cherry and green strawberry notes play with red flowers and a bit of dried earth mimicking the arid Mediterranean islands it hails from.

Vineyard Notes

Grown in the Vivian and Watervale Vineyards in Clare Valley. The grapes are hand harvested, sorted and processed in the vineyards ~ 50% whole berries, not whole bunches.

Production Notes

The natural fermentation begins in open top steel fermenters, hand plunged twice daily. Time on skins is 2 weeks with free run pressings combined, then settled, off gross lees for 7 days. Afterwards, the wine is aged in Slavonian 2000L foudre for 6 months, then racked to stainless steel for 3 months, No filtration, no fining...

Fun Facts

South Australia is home to some of the world's oldest continuously producing vines. Phylloxera has never set in here due to the strict quarantine protocols established in the 20th century. Prior to that time, trade was restricted by England. In the 19th century, having learned from our example, the British made sure that each state only traded with Britain, not with each other. None of the disease pressure faced by New South Wales and Victoria made it to the state of South Australia to this day!
