Vineyard Notes
Martin is a biodynamic farmer by principle, even though the certification is for organic, all of the steps for Bio-D are followed. Grapes are harvested throughout September.
Production Notes
The grapes are crushed and 20% of the stems are included in the spontaneous fermentation. Fermentation takes place in open 4,000L vats over 5-10 days. The wine is never filtered and aged in 4,000L used barrels for 10-15 months.
