Vineyard Notes
Martin is a biodynamic farmer by principle, even though the certification is for organic, all of the steps for Bio-D are followed. Grapes are harvested anytime between end of August and beginning of September.
Production Notes
The grapes are crushed and cold soaked with 100% of the stems for 12 hours before the beginning of the native yeast ferment. Fermentation takes place in stainless steel over 3-5 days. The wine is never filtered and aged in steel for 8-15 months.
Fun Fact
Roter Veltliner is related to Grüner-Veltliner, but if your German is ok you may notice it is red instead of green. It is actually a pink skinned grape that Martin turns into a crisp and spicy wine.
