(Pet Nat Solera, bottled 5.15.2022) Crisp, refreshing, semi-sparkling and bone dry. The wine definitely sees influence from yeast. The lees give the wine a distinctive salty, and sourdough flavor profile. The fruit is a combination of tart apple and white peach. The wine also has a bit of a cheese rind aroma that cleans up well on the palate.
