"Bone Dry Rosé – aromatic, spicy and great texture" is how the Koerners describe this super unique wine. I say super unique as it is almost a white wine. It is quite fresh and has a distinct yellow cherry nose staying true to the Sangiovese that makes up most of the juice.

Vineyard Notes

The grapes were hand-harvested and hand-sorted on April 6, 2021.

Soil Type(s): Sandy loam on deep clay

Production Notes

The grapes are crushed and de-stemmed with absolutely no time on the skins. The free run and later pressings are combined, then cold settled off solids for 24 hours. The wine is fermented utilizing native yeasts in ceramic eggs for 8 weeks. The wine is aged in stainless steel for 8 months. No fining or filtering.

Fun Facts

The ceramic eggs used in the production of this wine are so far the only wine they are used for. The wine is essentially a mirror image of the Blanc, except with no time on the skins compared to 20 days on the Blanc. We said the Koerners like to play with their grapes :)
