Our philosophy of winemaking is to not forget the Georgian traditional style while producing the modern style too. With no prior experience, we learned slowly over the years from our own mistakes and consultation with winemakers around Georgia. Using the living relationship with wine, and using the skills we developed at professional level in the monastery, today we produce 5 types of wine.

Philosophy

Based on the topography of the monastery, we decided to build a terraced vineyard where we have different type of grapes. We started bottling wines since 2016, both pitcher (qvevri) and classic (modern) styles.

The Zedashe Monastery is a working, devout Georgian Orthodox place of worship. The monks and priests who live there also tend to the vineyards and produce the wines on site! This is their first experience with exporting to the Western World.
