This is a different type of Saperavi, it is distinguished by rich tannins, long-lasting aromas of black plum, tea, berries and various dried fruits.

Production Notes

Produced in Sts. Peter and Paul Apostol's cellar, located on St. Elias mountain in Bolnisi. The oldest cellar remains from dated from the 5th century have been discovered here. The soil is mostly alluvial with pockets of clay. The grapes are hand harvested by the monastic team. Pressed, then fermented in qvevri. I wish I could say more but they are a bit guarded with their wine making style. Just a part of the monastic lifestyle....

This is a clone of Saperavi known for its elegance and brightness. More popular in Kartli, where the winters are not so extreme. Keep in a cold, dry place at 15 degrees C, or 59 degrees F!
