Pressed, then fermented in qvevri. This white grape is fermented and aged on its skins and stems, the traditional Georgian way. I wish I could say more but they are a bit guarded with their wine making style. Just a part of the monastic lifestyle.... Sourced from trusted partners, these grapes come from organically tended vineyards in Kakheti. Kartli is too moderate of a climate for this unique grape to thrive!

Kisi tends to be the darling of the winemakers. It is the last to ripen, and often the one that yields the least number of grapes. It produces some of the most complex wines of the region, making it one of the most revered varieties. If Nebbiolo could have a counterpart in Georgia- this would be the white grape version!
